Homemade Pound Cake with Strawberries

Lemon Pound Cake Recipe

Total Time: 30 minutes
Servings: 8 slices

Ingredients

  • 1 stick of organic butter
  • 1/2 cup xylitol (Swerve)
  • 4 eggs
  • 2 cups almond flour
  • 1/2 tbsp lemon extract (or if no lemon flavor – one tbsp vanilla extract and a sprinkle of cinnamon)
  • 1 tsp aluminum-free baking powder
  • coconut oil or butter for greasing

Directions

  1. Cream butter & xylitol together until smooth
  2. Add in one egg at a time and blend until fluffy.
  3. Add lemon extract or flavor and baking powder
  4. Once blended, add almond flour until smooth. 
  5. Grease a loaf pan with coconut oil or butter and bake at 350 degrees F for approximately 20 minutes or until golden brown.
  6. Can top with whipped coconut milk sweetened with stevia or fresh berries.
