Smothered Chicken

Ingredients

  • 2 chicken breasts
  • 3 tbsp coconut oil
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 red onion, sliced
  • 1 can of black beans
  • 1 cup raw or organic cheddar cheese, shredded
  • 2 tbsp salsa (watch ingredients)
  • salt, pepper, cumin, garlic powder, chili powder (to taste)
  • Optional toppings: sour cream, cilantro, avocado

Directions

  1. Bake seasoned chicken at 350 degrees in a small baking dish until cooked through, approximately 45 minutes.
  2. Saute veggies in coconut oil in the frying pan. 
  3. Place the sauteed veggies on top of the chicken once done.
  4. Cover with black beans. 
  5. Top with cheese.
  6. Place back in the oven to melt the cheese. 
  7. Top with optional toppings and salsa.
