To-Go Egg Bake

8 eggs

Vegetables – diced (ex: broccoli, peppers, onion, mushrooms, etc)

Salt & pepper to taste (or any other seasoning)

Raw or organic cheese (optional)

Turkey bacon (optional)

Coconut or almond milk (optional)

Coconut oil

 

Lightly grease muffin tin with coconut oil.  Whisk vegetables and eggs together.  Add seasoning.  Pour into muffin tins.  Bake 350 degrees F for 20-25 minutes.
