Banana Nut Muffins

Banana Nut Muffins

3 ripe bananas, mashed

2 organic eggs

2 tbsp butter, softened

4 tbsp honey

2 tsp organic vanilla extract

1 cup almond flour  (1/2 cup additional flour if needed)

1 1/2 tsp baking powder

1/4 tsp baking soda

1/4 tsp sea salt

chopped walnuts (as many as desired)

 

Mash the bananas.  Mix in the eggs, honey, butter, and vanilla.  Add in the dry ingredients, adding the additional 1/2 cup of flour if needed.  Pour into lined or greased muffin tin and bake approximately 15-20 minutes at 350 degrees F.  Bake until slightly brown on top and cooked through in the middle with the toothpick test!  Cool slightly before removing from tin.  Makes approximately 8-10 muffins.

The Ultimate Smoothie

The Ultimate Smoothie

  • 1/2 cup coconut milk (full fat)
  • 1/2 cup almond milk (I use unsweetened vanilla)
  • 1 handful of organic spinach
  • 1 scoop of Collagen Protein (I love doing 1/2 vanilla 1/2 chocolate)
  • 1 tbsp cocoa powder (especially if you do not add chocolate protein)
  • 1-2 tbsp organic raw cacao nibs
  • 2 tbsp organic whole flax seeds 
  • 2 tbsp organic whole chia seeds
  • 1 tsp maca root powder
  • 1 scoop of greens powder
  • 1 tbsp coconut oil 
  • Approximately 1/4 - 1/2 cup water (to desired thickness of shake) (or more milk)
  • 3-4 ice cubes

Put all ingredients except protein powder into a blender.  Blend until smooth.  Add protein powder and blend on low speed until it is all mixed in.  Enjoy!!

Healthy Donuts

Healthy Cinnamon and "Sugar" Donuts

Donuts

1.5 cups almond flour

3 organic eggs (*see below for the egg-free substitute!)

3 tsp organic pure vanilla extract

1/2 tsp baking soda

2 tbsp local pure organic honey

 

Topping

4 tbsp organic butter, melted

3 tbsp granulated Swerve brand sweetener or coconut sugar
(use erythritol and xylitol sugars like Swerve sparingly) 

1 tbsp cinnamon (or to taste)

Donuts:
In a bowl, mix all ingredients together until smooth.  Fill a greased (I use organic butter to grease) donut pan approximately 3/4 full.  Bake at 300 degrees F for approximately 10-15 minutes (keep a close eye on them, do not let them overcook or they will be dry) or until slightly light brown on top.  Allow to cool for 5 minutes before taking them out of the donut pan. 

Topping
Melt the butter and set aside.  Mix the sugar substitute and cinnamon in a bowl. Dip the top of the donut into the butter, just enough to coat...

Anti-Inflammatory Breakfast Pudding

6 tbsp organic cottage cheese

3 tbsp organic flax oil (such as Barlean's Brand)

3 tbsp organic flax seeds (ground up into meal)

2 tbsp organic raw almond butter (optional)

1 tbsp organic coconut manna (optional)

berries of choice to top

1 tbsp organic local and raw honey (optional)

 

Combine cottage cheese and oil in a bowl and use a hand blender to blend until smooth.   Stir in flax meal.  Top with any of your favorite toppings and enjoy!

 

This delicious breakfast treat for the whole family is easy to make and super nutritious.  Used as a long-standing anti-cancer protocol, the combination of flax seeds, flax seed oil, and the sulfur from the cottage cheese make this a superfood for your cells. 3 eggs

2 cups almond flour

1/2 tsp baking soda

1/2 tsp sea salt

2 tbsp coconut oil or butter, melted

1 tbsp Apple Cider Vinegar

2 tsp pure vanilla extract

20 drops liquid stevia (or to taste) (can use swerve too)

1 cup fresh or frozen berries of choice

 

In a mixing bowl, mix together the eggs, coconut oil, vanilla extra, apple cider vinegar.  Add to this mix the almond four, baking soda and sea salt.  Mix well and add in berries.  Spoon the batter into muffin tins lightly greased with coconut oil.  Bake at 350 degrees F for approximately 20 minutes or until golden brown and cooked through.

Easy Egg Casserole

Easy Egg Casserole

6 organic eggs

8 oz organic turkey bacon or 1/2 pound turkey sausage

1 cup coconut milk

2 cups organic shredded cheddar cheese

Sat and pepper

 

Cook meat in a frying pan until cooked through.  Beat eggs and milk together and add cooked meat, half of the cheese, and seasoning.  Sprinkle the remaining cheese on top. Using organic butter or coconut oil grease the bottom of an 8x8 baking dish.  Bake at 350 degrees F for approximately 20-30 minutes until golden brown.

Optional: can always add vegetables such as onion, spinach, bell peppers, mushrooms, etc.

Blueberry Almond Smoothie

1 large handful of spinach

1 cup coconut milk and/or almond milk

½ cup frozen blueberries

1 heaping spoonful almond butter

1 scoop grass-fed protein powder

Cacao nibs (optional)

Flax or chia seeds (optional) 

Amounts may vary depending on size of smoothie.  Above amounts are estimates for a single smoothie.   Mix all ingredients in blender until smooth.  Add more milk as needed.

Egg in Avocado

Slice the avocado in half and remove the pit.  Place in a small baking dish.  Crack an egg into each avocado half.  Bake at 425 degrees F for approximately 15-20 minutes.  Remove and add salt, pepper, chives, if desired.

Fiesta Omelet

3 eggs

½ cup black beans

½ cup vegetables (bell peppers, onion, etc)

Salt, pepper, chili powder (to taste)

2 tbsp coconut oil

Optional toppings: salsa, guacamole, organic cheese, organic sour cream

 

Whisk eggs, veggies, and seasonings in bowl.  In medium pan, heat oil over low-medium heat. Cook 3-4 minutes until mostly cooked, flip omelet and finish cooking 2-3 minutes.  Top with favorite toppings.

8 eggs

Vegetables – diced (ex: broccoli, peppers, onion, mushrooms, etc)

Salt & pepper to taste (or any other seasoning)

Raw or organic cheese (optional)

Turkey bacon (optional)

Coconut or almond milk (optional)

Coconut oil

 

Lightly grease muffin tin with coconut oil.  Whisk vegetables and eggs together.  Add seasoning.  Pour into muffin tins.  Bake 350 degrees F for 20-25 minutes.
